List of ingredients
Ingredients for two sandwich
- 2 olive oil ciabattas 140 g
- 1 aubergine
- A few handfuls of spinach leaves
- 75 g stracciatella cheese
- 125 g mozzarella
- 10 dried tomatoes
- 10 thin slices of mortadella
- 4 tablespoons of pesto
- Olive oil
- Salt, pepper
Preparation steps
Method
- Finely slice the aubergine, brush the slices with olive oil and bake in the oven for 20 to 25 minutes at 200°C.
Making the sandwich
- Cut the ciabatta into three pieces then cut the slices in half and lightly toast them in the oven.
- Spread pesto on the first slice of bread.
- Add a few rocket leaves, the aubergine slices and the pieces of mozzarella.
- Add the second slice of bread.
- Add mortadella, sun-dried tomatoes and a little stracciatella.
- Cover with the final slice of bread.
- Press slightly for better hold.
