Ingredients for two sandwich

  • 2 olive oil ciabattas 140 g
  • 1 aubergine
  • A few handfuls of spinach leaves
  • 75 g stracciatella cheese
  • 125 g mozzarella
  • 10 dried tomatoes
  • 10 thin slices of mortadella
  • 4 tablespoons of pesto
  • Olive oil
  • Salt, pepper

Method

  • Finely slice the aubergine, brush the slices with olive oil and bake in the oven for 20 to 25 minutes at 200°C.

Making the sandwich 

  • Cut the ciabatta into three pieces then cut the slices in half and lightly toast them in the oven.
  • Spread pesto on the first slice of bread.
  • Add a few rocket leaves, the aubergine slices and the pieces of mozzarella.
  • Add the second slice of bread.
  • Add mortadella, sun-dried tomatoes and a little stracciatella.
  • Cover with the final slice of bread.
  • Press slightly for better hold.
